Sora Takahashi (D2) from the Laboratory of Microbial Interaction has been selected as a recipient of the 2024 Sasakawa Scientific Research Grant by the Japan Science Society.
Ethanol production (Alcoholic fermentation) in yeast is essential for the production of sake, wine, beer, and other alcoholic beverages. However, the mechanism of high ethanol production in yeast is not well understood because it is linked to various metabolic and signaling pathways, and it is not easy to obtain mutant strains with altered fermentation ability.
Using of the research grant that we have received this time, we will make effort this research to contribute to the development of applied microbiology and fermentation science by breaking through the understanding of complex biological phenomenon.
